Guest Post: Pumpkin Energy Bites With Claire

Hello Everyone,

If you are a pumpkin pie enthusiast, then, these bites will just be the perfect end to your dinner! They are super rich and flavorful. You can keep them in the fridge up to a week, but trust me they will disappear much faster! Enough talk and let’s go on with the recipe.


– 1 cup of dates
– 1/2 cup of raw walnuts
– 1/3 cup of raw almonds
– 1 1/2 tbsp of pumpkin puree (no salt added)
– 1 tbsp of cinnamon
– 1/4 tsp of ground cloves
– 1/4 tsp of nutmeg
– 1 pinch of sea salt
– splash of water
Blend all the ingredients in a food processor (or blender) until you get a sticky consistency. Form 10 -12 balls. Optional: cover with roasted shredded coconut.
