Guest Post: Butternut Squash Soup With Claire

Hi Everyone Claire here,

As the temperatures start to cool down, a nice warm soup is always the ultimate comfort food. I wipped up the simplest and fastest (it takes 15 -20 min) recipe with my favorite seasonal veggies.

INGREDIENTS

– 1 butternut squash
– 1 yellow onion
– 1 garlic clove
– 1 can of coconut cream
Garnish : pumpkin seeds + coriander

DIRECTIONS

Melt 1 tbsp of coconut oil in a pot, in the meantime dice the onion, garlic and butternut squash. Add the diced onion and garlic to the pot, as soon as everything gets caramelized add the butternut squash. Let it simmer for 2 min and cover with water.
Once the squash is cooked, start blending with an electric hand blender and slowly add 1/2 can of coconut cream, salt and pepper.
The velouté is ready, garnish with roasted pumpkin seeds and coriander. But I also love Kite Hill Cream Cheese (almond based) and parsley.
